When we look at it literally, although it is referred to as the food made by baking the dough made of grain flour in the oven in a sheet or tandoor, it is much more in our lives, figuratively, bread, even at the center of our table. The job that will support people is an important part of our culture in terms of earning or eating and food. The first things that come to my mind are “holding hands with bread” “taking your bread out of the stone”, “bread in the lion’s mouth”. In the world of nutrition, bread is the cornerstone of carbohydrates, but a little confused lately. Bread waste is one of the important points to be considered.
The results of the study conducted by the Ministry of Food, Agriculture and Livestock and Turkish Grain Board on bread waste in recent years are remarkable as follows;
We waste 542 thousand tons of wheat with the bread thrown away in our country in a year. 101 million loaves of bread are produced every day, 95 million of which are consumed and 6 million are thrown away. The monetary value of 2.1 billion pieces of bread that is thrown away in our country in a year is 1.5 billion TL. With this money, 80 hospitals and 500 schools can be built.
Buying as much bread as you can consume is the biggest step in preventing bread waste. If you prefer sliced bread, you can keep the slices you do not consume in the refrigerator, then use them by heating them.
In our daily diet, we provide 50-60% of the energy from the carbohydrate group, at this point, choosing the right carbohydrate and choosing the right bread is important. Bread is included in a balanced diet as a basic carbohydrate source in daily life, including weight loss, pregnancy, special periods such as pregnancy, sports nutrition or nutrition of young and children. Although it varies according to the daily needs and characteristics of the person, 3-5 slices of bread can be consumed per day, the important thing is the amount and which bread you eat.
Pay Attention to Bread Choices
Choose whole grains as a source of carbohydrates, that is, in your choice of breads such as bulgur, buckwheat, whole rye grains. When choosing bread, create variety and choose whole grain. For example, there may be choices such as whole wheat, whole rye, buckwheat, einkorn wheat, chia.
Whole grain cereals are rich in protein, fiber, vitamins and minerals, as they contain bran, endosperm (flour) and seed (germ) parts together. At the same time, it balances blood sugar with its complex carbohydrate structure and prevents fast hunger. It is important for intestinal health as it is a source of fiber. Studies say that whole grain foods reduce the risk of diabetes, cancer and heart health diseases. I wanted to answer some of the most asked questions at once from here.
Why whole grain?
Actually, I had explained this to you before, but today I wanted to remind you once again, when I was talking about the right bread. Generally, grains are subjected to various processes while they are made ready for consumption.. Processing of grains, from brunette to white but also reduces their nutritional value. Whole grains contain many vitamins, fiber and antioxidants. In refined grains, the shell and core layers of the wheat or rye grain are peeled off. Processing of cereals; High losses in vitamins, minerals, fiber and health-beneficial phytochemicals causes to occur.
For example, while removing the bran and germ parts during the production of white flour improves the shelf life of the flour and the bread making quality, the nutritional value of the flour decreases due to the fact that these parts are richer in protein, fiber, vitamin and mineral than the endosperm part. Since whole grain flours are richer in nutritional value than white flour, bread made with these flours is superior in nutritional value compared to white bread.
